Seasonally Spiced Nuts

A quick little post to share a quick little party treat, taken from Nigella Christmas .  Vegetarians are usually advised to eat nuts, and I think a handful of mixed nuts make a lovely snack.  But to make them a bit more special (and a bit less healthy) for a special occasion, I like to jazz them up with this recipe.  They smell and taste delicious, and, while they are quite festive, you can enjoy them all year round.  If you’re having a party they’re a real bonus because they’re so quick and easy to make and are very well-received!

Seasonally Spiced Nuts

Ingredients:

250g mixed nuts (any kind you like – I usually have almonds, hazelnuts and cashews, but walnuts and Brazils make welcome additions too)

1 tsp garam masala

1/2 tsp salt

1 tbsp olive oil

1 tbsp soft light brown sugar

1tsp dried rosemary

Method:

1.  Put a large frying pan on a medium heat.  Line a baking tray with foil or greaseproof paper.  It’s best to prepare all your spices, sugar and oil now because you need to add them in quick succession and keep stirring to avoid burning or sticking.

2.  When the pan is warm, tip in the nuts and toast them for 3 minutes.

3.  Add the garam masala and salt, stir to coat.

4.  Add the oil sugar and rosemary.  Stir again to coat everything and remove from the heat.  Tip the nuts onto the baking tray, season with a bit more salt.  Let them cool down a bit before serving.
